Day Two Recipe

Rosemary Mustard marinated Pork Chops

INGREDIENTS:
5 tbsp Prepared mustard
2 tbsp Soy sauce
3 tbsp Water
1 tsp Dried rosemary
1 tsp Dried thyme
1 tsp Garlic powder
1 tsp Onion powder
½ tsp Pepper
2 tbsp Brown sugar
4 Bone in Pork Chops
1 tbsp Olive Oil
1tbsp Butter or margarine

DIRECTIONS:
Combine mustard, soy sauce, water, brown sugar and seasonings in a bowl. Whisk together.

Put pork chops in a large zip top bag, pour in marinade.

Refrigerate for ½ hour up to 4 hours.

Heat oil and butter over a med high heat in a non stick fry pan.

When butter is bubbling in the pan add pork chops. Depending on the size of your pan, you may have to cook only two at a time. Just make sure that the chops are not touching.

Cook on med high heat for 3 to 4 minutes on each side, depending on thickness of the cut you have.

Served tonight with roasted potatoes and steamed broccoli.

Good morning! Just in case anybody is actually reading this! haha. Went to the grocery store this morning. Found some pork chops on sale, so now I will spend a few hours contemplating what to make, looking for my inspiration.....  Any suggestions?

REDO...Day One Recipe: Perogies with Sausage and Peppers


Day one recipe:

PEROGIES WITH SAUSAGE AND PEPPERS

INGREDIENTS:
1 Med Onion; peeled and sliced
3 Bell peppers; sliced
(whatever colors you have on hand)
1 Can Mushrooms; drained
OR
2 cups Fresh mushrooms; washed and sliced
3 Large garlic cloves; peeled, crushed and finely minced.
Approx ½ LB Italian Sausage; sliced
1 tbsp Olive oil
12-14 Boiled (and drained) perogies(whichever kind you like best)
1 tbsp Oregano; dried
1 tsp Dill; dried or fresh will work here
½ tsp Paprika
1 tbsp Butter or margarine


DIRECTIONS:

Heat olive oil in a non-stick fry pan.

Add sausage and cook for about 6 or 7 minutes.

Remove sausage from pan, trying to keep as much of the “drippings” in the pan as possible.

Add veggies to the pan and sauté for about 8 min or until veggies are just tender.

Add sausage back to the pan with the perogies, butter and seasonings. Toss together and cook until everything is nice and warm.

Serves well with sour cream.


***Made this in a MUCH shorter time than anticipated! Early dinner for this fam!

Happy New Year! and Welcome....

Happy New Year all! And welcome to my little blog:)

As this new year is starting I am contemplating many different ideas for resolutions. Every year one is decided upon and generally broken within the month. This year I thought I would try something different. This blog is my new years resolution. My project , if you will! The plan is to record my dinner recipes every day.

For a few years now, I have been planning to actually try and record what I am doing while I am cooking. This is something I am pretty good at and I LOVE to do. My kids like to check it out and help out sometimes, so originally this started as a plan to put together a cook book for my two kids. A nice little “family treasury”, some fun memories and some useful recipes for their later years. The more I thought about this idea, the more I liked it.

Recently, money has been, shall we say, a little tight? So being the stay at home mom, who would like to continue to stay at home with her little ones, I have been on a never ending quest to find ways to make some cash from home.

So this is my latest grand scheme! Write the cook book for my kids, make it so it can be personalized for different people and get it published! GENIUS! I am on my way….no idea where to start…..and for my next genius idea, I thought I would start this blog. Share my daily dinner recipes(and my trials and tribulations), get some feedback and see where we end up!


Well, dinner is in about an hour, so I better get started! Will post the day one recipe soon! Hope you all enjoy!
