DAY 52 RECIPE: MINI OPEN FACE SANDWICHES

Well, the kids, the cat and I are still staying at my mom and step dads house right now (will be until the end of March). Tonight my Mom and Stepdad went out to a birthday dinner, SO I was just making dinner for the kids and I. Something easy, something fun, something I can make seem more fun for the kids while still including somewhat healthy/nutritious food......hmmm.
AHA! Perfect! I shall make some of my tasty-super quick party snacks. These are honestly, amazingly easy to make and are really delicious! They are a great hit as a party snack (for all ages) or a great fun treat dinner for the kids!
I use this recipe (or variations of it) frequently! I hope you all enjoy it!.

DAY 52 RECIPE:

MINI OPEN FACE SANDWICHES


INGREDIENTS:
3 Tbsp Butter or Margarine
3 Tbsp Parmesan Cheese
10 Baguette Slices, about 1/2" thick
1/4 Cup Finely Chopped Cooked Chicken
1/4 Cup Finely Chopped Cooked Ham
1/4 Cup Finely Diced Bell Pepper
1 Cup Cheddar Cheese, Shredded

DIRECTIONS:
Mix together butter and parmesan cheese, until all cheese in fully incorporated.
Heat a large non stick fry pan over medium heat.
Spread a layer of butter on one side of each slice of baguette.
Place baguette slices, buttered side down in pan.
Pile a small amount of chicken, ham and bell peppers on each baguette.
Cover with cheddar.
Cover pan and let cook for 4 - 6 minutes, or until cheddar is melted.

DAY 51 RECIPE: CHEATER LASAGNE

Hi there! I have missed doing this all week! I felt bad, as I could not even apologize or warn anybody that I would not be able to keep the blog up this week! Computer completely crashed and we just got a new one today, so here we are! I am back!
I took this unscheduled hiatus as an opportunity to be lazy and make some of the recipes I already have on the blog (and MAYBE have a few fast food dinners!) . So, I found myself with some leftover meatloaf. Big surprise! I don't know about you, but I am always trying to find something to do with leftover meatloaf. Well, I conducted a culinary experiment with my leftover meatloaf.
Checked the supplies to see what I had on hand and thought I may try to make some sort of casserole.....with cheese! because of course, aside from cotton candy, cheese is probably my favourtie food!
It is a much faster, cheaper, easier version of the amazing lasagne my family traditionally makes.
I think I will keep this cheater lasagne in my recipe collection and will continue to tweak it a bit perhaps! Let me know what you think readers! I hope you enjoy my experiment!

DAY 51 RECIPE:
CHEATER LASAGNE

INGREDIENTS:

4-6 slices Leftover meatloaf, about 1/2" thick
2 Tbsp Oil
1/2 Onion, diced
1/2 Cup Diced Bell Pepper(your choice of color)
2 Garlic Cloves, minced
1 Tsp Oregano
2 tsp Chilli Powder
1 Tbsp Molasses
1 -28 Oz can Tomato Sauce
1 -5.5 oz can Tomato Paste
1 Egg, slightly beaten
1/2 Cup Cottage Cheese
1/2 Cup Parmesan Cheese
3 Cups Mozzarella Cheese, grated
6-8 Uncooked Lasagne Noodles

DIRECTIONS:
Pre heat oven to 350 degrees.
In a large saucepan, heat oil over medium high heat. Add onion, pepper, and garlic. Sauté 6 - 8 minutes.
Add tomato sauce, tomato paste, seasonings and molasses. Cook about 15 minutes; stirring occasionally.
Remove from heat and stir in cottage cheese, egg, and parmesan cheese.
In a 9"X9" casserole dish layer as follows:
1/4 of Sauce
1/2 of Noodles
1/4 of Sauce
All Meatloaf slices
1/4 of Sauce
1/2 of Mozzarella Cheese
1/2 of Noodles
1/4 of Sauce
1/2 of Mozzarella Cheese
Cover with tinfoil and bake 45 minutes. Remove tinfoil and bake for 15 minutes more. Let stand about 10 minutes before digging in!
