DAY 23 RECIPE: OAT BRAN BANANA MUFFINS

James took us out for dinner tonight, so obviously, I did not have a dinner recipe for tonight. It was nice to go out though! So I made some very delicious muffins today and I thought I could share that recipe on here. I hope you all enjoy it too!
DAY 23 RECIPE:


OAT BRAN BANANA MUFFINS

INGREDIENTS:

½ Cup Butter or margarine

1 Cup Sugar

2 Eggs

3 Very Ripe Bananas, mashed

1 Cup Flour

¾ Cup Rolled Oats, Ground

¼ Cup All Bran Buds, Ground or crushed

1 Tsp Baking Powder

1 Tsp Baking Soda

 
DIRECTIONS:

Pre Heat oven to 350 degrees.

Line muffin tins with paper liners, or spray with PAM.

Cream butter and sugar together.

Beat in eggs one at a time, beating for one minute after each addition.

Add Mashed bananas beating for 1 minute.

Stir in oats and bran buds, and let stand for 10 to 15 minutes.

Now stir in flour, baking powder and baking soda. Stir just to moisten.

Put about ¼ cup of batter into each muffin liner.

Bake about 20 minutes. Test by inserting a wooden toothpick in centre. It should come out clean. Watch closely these are best if not over cooked.

 **You can add chocolate chips, nuts, or even dried fruit when you add the flour for a nice twist.

DAY 22 RECIPE: CHOCOLATE PEANUT BUTTER CHEESECAKE

Well, Here it is! So Yummy, So delicious! Decadent and not too difficult. I did not feel like making a big dinner of any sort, really I just didn't feel like cooking tonight and dealing with all that comes with that. SO, we had some nice snack type food. Cheese, crackers, deli meat, lots of veggies and dip. Very nice.So the recipe tonight is not a dinner recipe, but a dessert recipe (my favourite part of dinner). The only thing is, if you are going to make this, I would try to make sure you have whipped cream. I did not have any tonight, so I was so sad, but definately up lifted and happy to eat this deliciousness anyway! The whipped cream is a nice garnish, so would be some mini peanut butter cups....mmmmm. ENJOY!
DAY 22 RECIPE:


CHOCOLATE PEANUT BUTTER CHEESCAKE PIE


INGREDIENTS:


CRUST:
1 Cup Graham Cracker Crumbs
¼ Cup Sugar
¼ Cup Butter or margarine, melted
¼ Cup Crushed Peanuts

FILLING:
8 OZ Cream Cheese
2 Tbsp Butter or Margarine
½ Cup Sugar
2 Eggs
2 Tbsp Milk
1 Tbsp Flour
½ Tsp Vanilla
½ Cup Semi Sweet Chocolate Chips, melted
2 Tbsp Peanut Butter

DIRECTIONS:

CRUST:
Pre heat oven to 350 degrees.
In a medium bowl, combine graham cracker crumbs, sugar and peanuts. Pour in melted butter and mix until everything is fully incorporated.
Press into an 8” Pie plate.
Bake for 7 minutes.

FILLING:
Beat cream cheese, butter and sugar together for 1 minute.
Add eggs, milk, flour, and vanilla. Beat for another 2 minutes.
Melt chocolate chips in microwave.
Take 1/3 of batter and transfer to another bowl. With a spoon mix peanut butter in until smooth.
In the remaining 2/3 of the batter, add melted chocolate chips and stir until fully incorporated.
Pour chocolate filling into pie shell.
Pour peanut butter filling on top of chocolate filling and mix in just a bit, making sure to pull the peanut butter batter to the sides in at least 5 points.
Bake for 25minutes.
Let chill for at least 4 hours.

DAY 21 RECIPE: BREADED PORK STRIPS WITH CHILLI LIME DIPPING SAUCE


Had an interesting time making this one. For some reason when coming up with the recipe for the sauce I thought it would be a good idea to use a 1/2 cup of hot sauce instead of 3 Tbsp....Needless to say that sauce didn't quite make the cut! Poor James! I swear I could see the steam coming off his head!  Haha...This is the revised version, Hopefully it will be a bit better suited to all! Still Spicy, but not dangerous!
I suppose this recipe would be more like an appy, but sometimes that is what we do around here for dinner!!!

DAY 21 RECIPE:


BREADED PORK STRIPS WITH

CHILLI LIME DIPPING SAUCE

INGREDIENTS:
1lb Pork Steak, cut into thin strips
4 Tbsp Flour
½ Tsp Each Salt, Pepper, Cumin, and Cayenne Pepper
2 Eggs
2 Tsp Hot sauce
½ Cup Oil

SAUCE INGREDIENTS:
¼ Cup Ketchup
3 Tbsp Hot Chilli Sauce
3 Tbsp Brown Sugar
2 Tbsp Soy Sauce
Juice of one Lime
Zest Of one Lime

DIRECTIONS:
First start the sauce. In a small sauce pan whisk together all sauce ingredients.
Place on low heat and cook for about 20 minutes, stirring often.
Remove from heat and let stand until pork is ready.
Now for the pork strips:
In one bowl, combine flour, salt, pepper, cumin and cayenne pepper.
In another bowl whisk together egg and hot sauce.
Put bread crumbs in one last bowl.
In a non stick fry pan heat oil over medium high.
While oil is heating, dredge pork strips through the flour, then dip in the egg, then coat in bread crumbs.
Put an even single layer of pork strips into the hot oil. (You will probably have to do this in two batches.)
Cook for 5 to 6 minutes on each side.
Remove from pan and place on paper towels to absorb excess oil.

DAY 20 RECIPE: SPICY PEANUT PORK STIR FRY

Here it is, a new recipe made with my spicce loving husband in mind. It was a hit, not a scrap left. Hope everybody else enjoys it as much as my James.

DAY 20 RECIPE:


SPICY PEANUT PORK STIR FRY

INGREDIENTS:
4 Thin cut Pork Chops, cut into thin strips
1 Small Onion, thinly sliced
¼ Red Pepper, and Yellow pepper, cut into strips
1 Cup Sliced Carrots
½ Cup Sliced Celery
2 Cups Broccoli Florets
1 Can Sliced Mushrooms, drained
3 Garlic cloves, minced
3 Tbsp Flour
1 Tsp Pepper
1 Tsp Salt
½ Tsp Paprika

SAUCE INGREDIENTS:
2 Tbsp Creamy Peanut Butter
2 Tbsp Vinegar, rice wine or white
3 Tbsp Soy Sauce
1 Tbsp Brown Sugar
3 Garlic Cloves, Finely minced
1 Tsp Ginger
1 Tsp Sesame Seeds
1 Tbsp Hot Sauce (sweet chilli sauce works great)

DIRECTIONS:
In a medium sized bowl stir together flour, salt, pepper, and paprika.
Add pork strips and toss.
Make sauce. - In a small bowl whisk together peanut butter, soy sauce, brown sugar, ginger and hot sauce Until smooth. Add garlic and sesame seeds, mix together.
Heat Oil over med high heat in a large non stick fry pan or a non stick wok.
Add pork to pan and sauté for about 4 minutes.
Add onions, mushrooms, carrots, and celery; cook for 5 more minutes.
Add peppers, and broccoli, sauté for 1 minute. Add ¼ cup of water and cover with a lid. Cook for 3 more Minutes.
Pour sauce over everything and cook for an additional 5 minutes.
Serve on rice.

DAY 19 RECIPE: PANCAKES (FOR POOR LITTLE BROOKLYN)

Here they are, the pancakes made for poor little Brooklyn! She seems to be getting better! She ate every last little scrap of her pancakes! Hope you all enjoy them as much as she does!
DAY 19 RECIPE:


PANCAKES

INGREDIENTS:
1 & ¾ Cup Flour
3 Tsp Baking Powder
½ Tsp Salt
2 Tbsp Sugar
½ Tsp Cinnamon
1 &½ Cups Milk
3 Tbsp Butter, melted
2 Eggs, separated
1 Tsp Vanilla

DIRECTIONS:
Heat non stick fry pan on med high heat. Spray with a generous amount of baking spray(like PAM).
Whisk together all dry ingredients in a large bowl.
Combine egg yolks, melted butter, milk and vanilla in a small bowl. Lightly whish together.
Beat egg whites until stiff peaks form, also in a separate bowl.
Add wet ingredients to dry ingredients and mix thoroughly.
Fold egg whites into batter.
Scoop about ¼ cup of batter for each pancake into hot pan.
Cook for 2 minutes, flip and cook about 2 minutes on the other side.
Enjoy!

Poor Little Brooklyn!

Well, this morning started off a little slow. We were late getting up and seemd to have quite a difficult time getting going. Finally we pulled ourselves together and headed out the door to go to the kids' play group. Of course we were an hour late, but I thought it would be good to go anyhow, and let the kids burn off some steam.
What a wonderful idea! Everyone was co-operating with Mom, no fights or meltdowns! We managed to get to the mini van and get ourselves to group! YAY! Oh what awonderful time we were all having! This is a lovely group, that we don't get to nearly as often as we would like to. Great kids, lots for them to do, a great social interaction for the kids. Wonderful for old Mom as well...all the Moms at group are so friendly and really geniunely nice people.
Definately shaping up to be a good day. Even as we were getting ready to leave group this morning, which usually brings an epic battle and enevitable meltdowns, we were making great headway. Child co-operation, no freak outs or fights. How nice:) All of a sudden, there was a collision with Brooklyn and a little boy. MAYHEM. So much for the good day! There was blood everywhere and injuries on both sides! Just terrible! Everyone got cleaned up and consoled, and in the end everyone survived.
Unfortunately, this incident put a new twist on our day. Poor little Brooklyn has been so upset and hurting all day. Hard stuff to get over I guess. Poor little thing! The day is starting to look up again though!
In an effort to get Brooklyn back to her old self, and to help heal her little wound, Mommy has decided that Pancakes are in order for dinner tonight. They are her favourite! To be quite honest I really don't mind what most people would think an odd dinner menu choice. I LOVE LOVE LOVE breakfast food! If I had it my way, 90% of our diet would consist of breakfast food. Alas this is not the case, so I will enjoy the nice little treat for tonight! I hope you all enjoy it too!

DAY 18 RECIPE: HONEY GARLIC CHICKEN DRUMSTICKS

DAY 18 RECIPE :


HONEY GARLIC CHICKEN DRUMSTICKS

INGREDIENTS:
10          Chicken Drumsticks
5            Garlic Cloves, finely minced
1/4 cup   Soy Sauce
2 Tbsp    Vegetable Oil
1/2 cup    Water
2 Tbsp     Honey
a few drops of Sesame Oil
2 Tsp       Sesame Seeds
2 tsp        Ginger
1/2 Tsp    Salt
1/2 Tsp    Pepper
1 Tsp       Onion Powder
1/2 Tsp    Chilli Flakes (optional)

DIRECTIONS:
Combine all ingredients except drumsticks in a large zip top freezer bag. Squish around to make sure everything is incorporated.
Add drumsticks, squish around a bit more. Throw in the fridge for a while. At least 1/2 hour up to four hours.
Place drumsticks on a foil lined sheet pan, making sure none are touching. Pour the leftover marinade over the drumsticks.
Bake in 400 degree oven for 45 to 50 minutes. Turn once about 1/2 way through cooking time.

Day 17 Recipe: ROASTED POTATOES

DAY 17 RECIPE:


ROASTED POTATOES


INGREDIENTS:
6  Medium Potatoes, cut into 1/2 inch pieces
1  Small Onion, Roughly chopped
4  Garlic Cloves, peeled and crushed
4  Tbsp Canola Oil
2  Tbsp Oregano
1  tsp Dill
1  tsp Salt
1/2 tsp Pepper
1/2 tsp Paprika


DIRETIONS:
Pre Heat oven to 400 degrees
Throw potatoes, onion, garlic and seasonings into a large bowl.
Pour oil over the top, toss to mix everything.
Spread out on a large, parchment lined sheet pan. Try to keep in a single layer for more even roasting.
Put in the oven and bake for about 1 hour or until potatoes are tender and golden brown. Turn once during cooking.
