DAY 20 RECIPE: SPICY PEANUT PORK STIR FRY

Here it is, a new recipe made with my spicce loving husband in mind. It was a hit, not a scrap left. Hope everybody else enjoys it as much as my James.

DAY 20 RECIPE:


SPICY PEANUT PORK STIR FRY

INGREDIENTS:
4 Thin cut Pork Chops, cut into thin strips
1 Small Onion, thinly sliced
¼ Red Pepper, and Yellow pepper, cut into strips
1 Cup Sliced Carrots
½ Cup Sliced Celery
2 Cups Broccoli Florets
1 Can Sliced Mushrooms, drained
3 Garlic cloves, minced
3 Tbsp Flour
1 Tsp Pepper
1 Tsp Salt
½ Tsp Paprika

SAUCE INGREDIENTS:
2 Tbsp Creamy Peanut Butter
2 Tbsp Vinegar, rice wine or white
3 Tbsp Soy Sauce
1 Tbsp Brown Sugar
3 Garlic Cloves, Finely minced
1 Tsp Ginger
1 Tsp Sesame Seeds
1 Tbsp Hot Sauce (sweet chilli sauce works great)

DIRECTIONS:
In a medium sized bowl stir together flour, salt, pepper, and paprika.
Add pork strips and toss.
Make sauce. - In a small bowl whisk together peanut butter, soy sauce, brown sugar, ginger and hot sauce Until smooth. Add garlic and sesame seeds, mix together.
Heat Oil over med high heat in a large non stick fry pan or a non stick wok.
Add pork to pan and sauté for about 4 minutes.
Add onions, mushrooms, carrots, and celery; cook for 5 more minutes.
Add peppers, and broccoli, sauté for 1 minute. Add ¼ cup of water and cover with a lid. Cook for 3 more Minutes.
Pour sauce over everything and cook for an additional 5 minutes.
Serve on rice.
