DAY 50 RECIPE: BEEF NOODLE SOUP

Hello! Last night I had made a nice Roast beef dinner with the mashed potatoes and all the fixings. I had some leftover roast beef, so I thought I would make a big pot of soup. This freezes really well, BUT if you are going to freeze it, DO NOT put the noodles or peas in the soup you are to freeze. I made a really big pot of this soup, and took maybe 4 or 5 cups of it out and put in a smaller soup pot, then added the noodles and peas to the small pot. If you are going to use it all right away, by all means add all the noodles and peas, but if you are going to freeze some, freeze it without, and add the noodles and peas when you warm it up!

DAY 50 RECIPE:

BEEF NOODLE SOUP


INGREDIENTS:
2 Tbsp Canola Oil
3 Cups Leftover or already cooked Beef, cut into bite size pieces
1 Large Onion, roughly chopped
4 Ribs Celery, roughly chopped
3 Large Carrots, peeled and roughly chopped
4 Garlic Cloves, minced
12 Cups Beef stock
1 Tsp Chilli Flakes
2 Tsp Thyme leaves
2 Bay Leaves
¼ Tsp Nutmeg
½ Tsp Pepper
2 Cups Short Cut Pasta Noodles
1 Cup Frozen Peas

DIRECTIONS:
Heat oil over medium high heat in a dutch oven.
Add beef. Saut̩ about 8 Р10 minutes.
Add stock and stir well.
Drop in onions and garlic. Reduce heat to low. Simmer about an hour.
Add celery, carrots and seasonings. Simmer another 40 minutes.
Add pasta cook for 5 more minutes.
Add peas and cook for 2 minutes more. Serve

DAY 49 RECIPE: CREAMY DREAMY MASHED POTATOES

So I made a roast beef dinner for my family tonight. Since I have already posted my favourite roast beef recipe earlier, I thought I would post the recipe for the mashed potatoes I made tonight. I have a few different versions of mashed potatoes that I make and this is one of my favs! I will say that I don't normally bake it in a tin foil pie plate, but when I am not at home I use what I can find! They still tasted just as delicious as they always do! Please enjoy!
DAY 49 RECIPE:

CREAMY DREAMY MASHED POTATOES


INGREDIENTS:
10 Medium Sized Russet Potatoes; peeled and cubed
Cold Water
1 Tsp Salt
¼ Cup + 2 Tbsp Butter or Margarine
¼ Cup Milk or Cream
½ Cup + 2 Tbsp Parmesan Cheese
½ Tsp Garlic Powder
Salt and Pepper to taste

DIRECTIONS:
Pre heat oven to 350 degrees.
Place potato pieces in a large pot. Cover with cold water; water level should be at least 1 inch above potatoes. Add 1 Tsp salt. Put on medium high heat and bring to a boil. Keep boiling until potatoes are fork tender.
Drain and return to pot.
Meanwhile, slowly heat butter and milk in a small sauce pan. Stir constantly until butter is melted.
Sprinkle garlic powder, salt, pepper and ½ cup of parmesan cheese over potatoes. Mash all together.
Slowly add milk/butter mixture to potatoes and continue to mash until smooth.
Transfer to a baking dish or casserole dish, smooth out the top.
Dot with remaining butter, and sprinkle with remaining parmesan cheese.
Place in the oven for 15 minutes. Broil for 5 minutes longer or until golden brown.

DAY 48 RECIPE: CRUNCHY GRILLED HAM AND CHEESE SANDWICHES

Hello there everyone! My little babies are sick today, so there was not a whole lot of time to cook (or blog!) so here is my quickie recipe for  really nice twist on grilled cheese....The outside has a really yummy crumchy parmesan crust with a hint of garlic....really nice change....Hope you all enjoy it for a quickie dinner (or lunch):)

DAY 48 RECIPE:

CRUNCHY GRILLED HAM AND CHEESE SANDWICHES


INGREDIENTS:
6 Tbsp Butter or Margarine
6 Tbsp Parmesan Cheese, fine shred or Powder
1 Tsp Garlic Powder
8 Slices Bread
4 OZ Cheddar Cheese, thinly sliced
16 Ham Slices
½ Red Onion, thinly sliced
4 Tsp Mustard

DIRECTIONS:
Pre heat non stick fry pan over medium heat.
Mix together butter, garlic powder, and parmesan cheese.
Spread a layer of butter mixture on one side of each piece of bread.
Spread 1 tsp of mustard on 4 pieces of the bread (unbuttered side).
Place 2 slices of ham on mustard.
On top of ham, put a few slices of onion.
Place three slices of cheese on onion.
Top with remaining bread slices; buttered side on the outside.
Place in fry pan. Cook 2 to 3 minutes on each side, or until golden brown.

Hey there everyone! I have arrived safely at my holiday destination! Not the lovely tropical island dream vacation, but a definate happy place for me! My kids, my little sister, my cat and I came to visit my Mom and Step Dad for a while. Nice to be back in my hometown.
