DAY 23 RECIPE: OAT BRAN BANANA MUFFINS

James took us out for dinner tonight, so obviously, I did not have a dinner recipe for tonight. It was nice to go out though! So I made some very delicious muffins today and I thought I could share that recipe on here. I hope you all enjoy it too!
DAY 23 RECIPE:


OAT BRAN BANANA MUFFINS

INGREDIENTS:

½ Cup Butter or margarine

1 Cup Sugar

2 Eggs

3 Very Ripe Bananas, mashed

1 Cup Flour

¾ Cup Rolled Oats, Ground

¼ Cup All Bran Buds, Ground or crushed

1 Tsp Baking Powder

1 Tsp Baking Soda

 
DIRECTIONS:

Pre Heat oven to 350 degrees.

Line muffin tins with paper liners, or spray with PAM.

Cream butter and sugar together.

Beat in eggs one at a time, beating for one minute after each addition.

Add Mashed bananas beating for 1 minute.

Stir in oats and bran buds, and let stand for 10 to 15 minutes.

Now stir in flour, baking powder and baking soda. Stir just to moisten.

Put about ¼ cup of batter into each muffin liner.

Bake about 20 minutes. Test by inserting a wooden toothpick in centre. It should come out clean. Watch closely these are best if not over cooked.

 **You can add chocolate chips, nuts, or even dried fruit when you add the flour for a nice twist.
